Comfort Food

Alabama needs our prayers.The tornado on 4-27-11 destroyed so much. My husband was born and raised in Tuscaloosa and attended university there as well. It was hit hardest.

All of his family is ok.

Tonight I'm serving up some comfort food. Heck, it may be on the menu all week.

Twice baked mini potatoes.






Boil red potatoes with salted water. Start with potatoes in the water and let stay as water boils. (This cooks them evenly and thoroughly.)

Let cool, slice and scoop out a hole inside. A melon baller works or a measuring spoon. Slice bottoms so they stand up.






Fry the hole side down until golden brown.


Mix inside of potatoes with butter, sour cream, salt and pepper. Stuff inside the potatoes and top with shredded cheese.




Return to oven to Brown tops before serving.

Enjoy.
