Comfort Food

Alabama needs our prayers. The tornado on 4-27-11 destroyed so much. My husband was born and raised in Tuscaloosa and attended university there as well. It was hit hardest.

All of his family is ok.

Tonight I'm serving up some comfort food. Heck, it may be on the menu all week.

Share your favorite comfort food here or in your blog in honor of those struck by this disaster.
-------------------------------------

Twice baked mini potatoes.

Boil red potatoes with salted water. Start with potatoes in the water and let stay as water boils. (This cooks them evenly and thoroughly.)

Let cool, slice and scoop out a hole inside. A melon baller works or a measuring spoon. Slice bottoms so they stand up.

Fry the hole side down until golden brown.

Mix inside of potatoes with butter, sour cream, salt and pepper. Stuff inside the potatoes and top with shredded cheese.

Return to oven to Brown tops before serving.

Enjoy.

Bring some southern comfort to your dinning room tonight and say a prayer for Alabama.

Paisano's: Say Cheese

A new restaurant opened in Discovery Bay and it is a hit.

Slices are bigger than my face and are $25 HK or about $3 us. One is plenty enough for each adult.

Kid friendly, easy, airy, value for money and delicious.

Dig in!!

This is their third location in Hong Kong and we welcome them to DB, it fits in well here and is already quite successful. (the other two locations are in central and sai kung)

But it is not just big yummy pizza served; salads, pasta and subs fill the menu too. (Don't worry, we will test it all out and report back.)

We give Paisano's pizza 5/5 woks!!

Easter Gras

In Hong Kong (and in the UK) Easter grass does not exist. Even though it is probably made here, I can't get it. So what's an expat to do?

Ask Martha.

Here's an ingenious way to recycle wrapping, construction, or kraft paper: Feed leftover sheets or scraps through an electric shredder for colorful strips to use as basket grass. Desktop paper shredders are available at office-supply stores. To transform flat strips into spirals, crumple them in your hands, or curl with scissors. Feed the short side of rolled papers through shredder to retain the curl.

I used scissors to cut paper in strips then wrapped the strips around my fingers for the full, curled look.

Cheng Chau: it's like Mardi GRAS and Thanksgiving Mixed

Part 5:
It was such a fun atmosphere!! Party in the streets, music, dancing, families together, tons of food, street venders, beautiful weather and people in a good mood.

There's pirate caves out there! Real ones.

Fresh seafood? You betcha. Pick it then cook it then serve it!

Music everywhere.

Blowfish anyone?

Baby Roux gets a sea shell flute instead.

Mamma Roux got a new hat.

Baby Roux was filthy and exhausted. (look at that mouth!) He slept all the way home and through the night. His bath was the first thing we did the next day. But nothing will wash away our memories of such a fun day.

Cheng Chau part 3

After we went through the cemetery, we made our way to the walkway around the shops and water, a boardwalk in a way. Here are some images from our stroll.

This lady uses her feet to hold fishing line taught while she makes beaded creatures.

Baby Roux settled on a dog.

Here, a lady does her washing at the free tap near the cove.

A man sells dried fish. He seemed to have the market cornered.

Check back for part 4!
