No meat and no dairy and no one can tell what's missing.
Did know that tofu is high in protein and takes the flavor of whatever it's mixed with? It's true.
Soft vs. Firm:
I used soft for the cheese effect, but firm tofu is great in salads, soups, sandwiches, you name it.
There is flavored tofu too, but that's another post.

ReplyDeleteOddly enough, soy products are popular here. I trick the kids in our feeding projects with texturized soy added to spaghetti sauce. We also add soy to beans and rice. Beans are already high in protein, but I get the soy/rice packages free. And the beans are really the "trick' to get them to eat the vitamin enriched food.
